They present large quantities of B group vitamins, very important for the harmonious development of all the organism’s structures, including nervous tissue. They also contain D vitamin and they are composed of 58-60% carbohydrates, 20-23% protein, 9-10% fibre and 3-4% of lipids.
Thenols and terpenoids with antioxidant function are also important.
