properties

The smell is soft and the taste, very particular, tending to acid. The consistence is soft and it can be used in several recipes.

Functional
properties

It has preventive and curative qualities against many pathogens factors. Among the different organic properties highlighted there are antiviral and antibacterial activity and immunostimulating action.
The Lentinan, a Beta Glucan present in the mushroom, has immunostimolating and immunomodulatory properties and it acts rebalancing and by reinforcing the immune system activity.
Some scientific studies highlight an important role in the lowering cholesterol and in the cancer prevention.

Nutritional
properties

They contain 7 of the 9 essential amino acids. Mineral fractions are made up of about 90% of potassium, phosphorus, calcium and magnesium. They present large quantities of B group vitamins, very important for the harmonious development of all the organism’s structures, including nervous tissue. They also contain D vitamin and they are composed of 58-60% carbohydrates, 20-23% protein, 9-10% fibre and 3-4% of lipids.
Thenols and terpenoids with antioxidant function are also important.
