properties

The mushroom meat is quite firm, fibrous in the stem and whitish. The taste is very pleasant while the smell is reminiscent of ground flour.

Functional
properities

The effects on the organism are comparable to those described for Pleurotus Eryngii: it helps reduce bad cholesterol, has a remarkable antioxidant action and helps to inhibit platelet aggregation, avoiding the formation of thrombi.
Some research shows a hepatoprotective effect and anti-inflammatory properties.

Nutritional
properties

Compared to other mushroom varieties, Pleurotus nebrodensis has the highest vitamin B12, B2 and B7 content. The protein, fat, carbohydrate and fiber content is very similar to that of Pleurotus Eryngii.
